Curious about seitan?

One of my favorite resturants in the entire world is Candle 79 in NYC. It is totally vegan and truly amazing. They published a cookbook link below

We made their seitan and although it was good, it was not near as good as being in the restaurant. For those of you not familiar with seitan it is the protein portion of wheat. It is used in many vegetarian and vegan recipes for a meat substitute. Below are some pictures of our process.
It requires a lot of flour!

but it is very delicious!
