Birthday cupcakes

These were some cupcakes I made for a coworker for his birthday. My recipe is modified from the Joy of Vegan Baking cookbook. I have reduced the sugar from the original recipe and added more egg replacer. I also did something fun with the the batter, I separated it into three different bowls and added coloring to each and swirled them around they almost looked like they were tie-dyed!  For the frosting I use a basic butter cream frosting recipe but I put some white frosting in the bag as well as some bleeding to get the nice swirl. Which always looks fun and also like it is a lot more work than it really is!

Cupcakes!

I made these cupcakes for a very special two year old. Her birthday is today and I hope they are truly enjoyed. The theme of the party was monkeys so I decided to do a banana vanilla and then for those less adventurous I also did a plain vanilla.
They both have a butter cream that I created very stiff so they wouldn't fall during travel, and now that I have done the cream that stiff I don't think I will ever do it any other way! I garnished the banana vanilla with a dried banana chip and the vanilla with rainbow sprinkles.

Mom's Birthday Cupcakes

These were cupcakes for my Mother's birthday. The recipe came out of the Joy of Vegan Baking and it has a simple butter cream frosting on top, the butter cream is also vegan. I used star cupcake tins to keep with the star motif. They were a hit! So I thought I would share the picture!
